Bulk Beef SalesIn addition to the individual cuts of beef we sell in our farm store, we also offer the opportunity to purchase meat in bulk.
We raise our own beef animals here at the farm. When they are ready to send to the butcher, customers can buy a quarter, half, or whole steer. Most of our bulk beef is processed by Nolts Custom Meats in Lowville, NY. Their staff assists customers as you decide what meat cuts to order. When the meat is ready, it will be shrink-wrapped and frozen. Orders can be picked up either at our farm or at Nolts. To order bulk beef, please contact us to check availability. We send animals to the butcher several times during the year (but not in the autumn.) Meat is ready for pickup at our farm about 2 weeks after it goes to the butcher. |
How much meat do I receive?
QUARTER BEEF: Usually around 140 to 170lbs of finished/packaged meat. Can contain a variety of cuts including roasts, steaks, and ground beef. The meat will be shrink wrapped, frozen, and packed into cardboard boxes labeled with your name. A quarter of beef often fits into 3 boxes, each measuring approximately 12"x 8" x 20".

How will the beef be cut? Am I going to end up with all ground beef?
Nolts' staff assists customers as you decide what meat cuts to order. You will have some options (ex. "I want pot roast but we don't want steaks") and Nolts can give you some ideas. They can provide you with a list of options, including stew meat, steaks, roasts, ribs, organ meat, etc. If you really wanted to have 150 lbs of ground beef, you could order that. :)
What is the price?
The price (starting May 2024) is $3.15 per pound for meat and customers cover their own butchering costs. For a quarter of beef, the total cost may be close to $550-600. Final costs are determined after the butchering is finished and beef weights are determined.
When do I pay?
Customers pay in full when they pick up their meat. No deposit is required. We do ask you give us as much notice as possible if you decide not to purchase the beef you have reserved. Customers will have to pay for meat that has already been butchered.
What forms of payment do you accept?
We accept cash, PayPal, Venmo, and CashApp.
While EBT/SNAP is accepted in our farm store, we are unable to accept this form of payment for quarter/halves of beef. (Technically a quarter of beef is sold as "live animal" whereas our store beef is USDA inspected and qualifies as food.)

Can my [mom/sister/friend] order with me?
If you want less meat than a quarter (~150 lbs), you can find a friend who will split the meat & bill with you after pickup.

I want beef cuts from the rear of the animal. Is that okay?
Meat cuts from both the front and rear of the animal are mixed and matched between two customers purchasing quarters. If you want a cut specific to the rear of the animal (ex. tenderloin), you may ask for that cut and the butchers will do their best to accommodate.
Customers who still wish to have their entire quarter taken from the rear portion of the animal will need to pay an additional $0.30/lb.

Can I get sandwich meat or hotdogs?
Yes! Nolts has a variety of products they can make with your beef including snack sticks, bologna, hot dogs, and dried beef. There is an additional processing fee per pound of meat. Some products have a minimum weight (ex. 10 lbs) for ordering. Feel free to call Nolts (315-376-4712) to get a list of items and fees.
Please note these specialty items may not be ready for pickup until several weeks after the main order is done. In this case, the customer is responsible for picking up their additional items in Lowville, NY.
